This is complemented by a tea station from local Seven Seas Tea which offers a modern take on the Australian Billy Tea.The massive chiller on the side displays a range of yoghurts, juices and fruits to perk up your day.
At lunch, guests can savour well-executed creations using Western Australian ingredients like slow-roasted lamb shoulder. There are also Asian-inspired options such as nasi goreng, prawn rendang and Korean fried chicken to boot. Meanwhile, a lunch spritz station features a rotating selection of three bespoke WA-inspired Club Spritzers including Australian Botanic, Plum and Elderflower, Peach, Blackberry and Orange Blossom.
If you’re back in the hotel after sightseeing or shopping in the city, you can savour afternoon tea at the Club Lounge, or head to Hearth for their Summer Afternoon Tea (available from now till end March). The elegant restaurant on the ground floor focuses on seasonal menus using the freshest local ingredients prepared in the custom hearth.
Hearth’s impressive tea-time delicacies include Wagin duck sausage roll with saltbush salsa verde and onion jam; Cambray triple cheese custard tart with carrot ginger and lemon myrtle; strawberry infusion with whipped ganache, rosella and white chocolate and more. Complete your languorous afternoon with chilled bubbly like Howard Park Petit Jete sparkling wine or Moet & Chandon Grand Vintage champagne. For even more relaxation, book a session at the spa. Pamper yourself with one of the treatments of take a dip in the vitality pool.
In the evenings, make your way back to the Club Lounge for canapés and creative specialties like charred Fremantle octopus and Margaret River wagyu – paired with a selection of local wines and spirits. On rotation too is a selection bespoke WA inspired gin & tonics, infused with native ingredients like rosella and davidson plum, kaffir lime and lemon myrtle. Sip your drinks at the terrace while admiring Perth’s golden sunset and fluffy pink clouds in the horizon.
For a nightcap or light supper – if you must – the ‘cordials’ menu features a selection of sweet treats, cheeses, condiments and crackers. Pair them with West Australian wines or local and international spirits. There is also a signature moment during the Club’s cordial hour – “Bespoke Remedy”, a tea infusion with native ingredients, is served as an evening digestive. This can be consumed brewed in hot water or as an infused spirit and mixed with a tonic.

The sommelier will tailor and offer a tasting of various premium wines (about 4 to 8 wines depending on the guests’ interest and flavour profile).
