Liquid Legends: A Boozy Trip Around the World at Waatu

Each month, Waatu’s bar team will spotlight the signature drinks from a different country, offering a fresh perspective on classic cocktails. From locally inspired creations to internationally recognised pours, this rotating selection invites guests to explore a variety of flavours in a single week. Led by Putu Wirawan, the island’s respected bartender, expect delightful concoctions at the bar. Find the current menu here.

Get ready for Waatu Yakitori Nights with chef James Viles

Yakitori Night with Jimmy V

Celebrating the art of grilling over open flames, Waatu’s Yakitori Night is all about expertly charred skewers prepared by chef James Viles. Inspired by traditional Japanese techniques, the menu showcases a selection of skewered meats and vegetables cooked to perfection just with fire. No gas nor electricity is needed. Perfect for an after-dark bite or a post-beach meal, this gathering part of Waatu new monthly food and beverage events brings together food lovers for an informal yet flavour-packed dining experience. The first Jimmy V’s Yakitori Night will take place on 21 March.

Up in Smoke Night with chef Andy Photiou

Executive chef Andy Photiou takes the spotlight with Up in Smoke Night, a showcase of slow-cooked meats, seafood, and fire-infused dishes. By using traditional smoking techniques and carefully controlled heat, this event highlights the depth of flavour that comes from cooking over embers and fire. Up in Smoke Night starts on 11 April and will take place every month.
