Highlights from the Fall 2017 Chef’s Tasting Menu include the French-style American Pigeon, in which the pigeon is seared on the plancha to caramelise the skin to perfection, bringing out the gamey flavour of the meat. A smooth and silky parsnip purée adds a touch of creaminess and the dish is shrouded in a drizzle of pigeon jus infused with Japanese Muscat grapes, for a refined hint of sweetness.
Those craving spectacular Japanese flavours will love the hearty Beef Risotto. Fine Kumamoto A4 Wagyu beef from the picturesque island of Kyushu, popularly dubbed as the caviar of meat and prized for its rich marbling and distinct sweet flavour, is slow-braised for 48 hours, resulting in exquisitely tender melt-in-your-mouth flesh. A classic Bordelaise sauce accompanies the beef, beautifully complementing the creamy risotto, while pork crackling adds texture and crunch to every bite.
Finally, head to the Chinese kitchen for delectable Steamed Omakase Fish with Pickled Chillies. Fish freshly flown in from the Okinawa Prefecture and Tsukiji market is flawlessly steamed to allow the natural flavours and soft texture to shine.
