Andaz Bali, by Hyatt, is bringing a fresh perspective to afternoon tea with an exclusive two-day collaboration featuring Chef Julien Perrinet, Executive Pastry Chef Asia Pacific at Park Hyatt Tokyo. Taking place on 22 and 23 October 2026 at Village Square, the experience brings the chef’s refined pastry expertise to Sanur, with a menu that celebrates fruit-forward flavours and contemporary dessert craftsmanship.
At the heart of the collaboration is Chef Julien’s approach to pastry, which balances technical precision with seasonality and the natural character of each ingredient. Working with Les Vergers Boiron, the French producer known for its premium fruit purées and preparations, the chef will present a collection of sweet creations developed exclusively for the occasion.
Moving beyond the conventions of traditional afternoon tea, the experience brings together contemporary desserts and savoury bites, with fruit taking centre stage. The collaboration explores how vibrant fruit flavours can be transformed into sophisticated pastry creations, offering a considered interplay of taste, texture and technique.
With extensive experience across Asia Pacific, Chef Julien brings an international perspective to the resort’s culinary scene. His guest appearance also reflects the collaborative spirit within the Hyatt portfolio, connecting culinary talent across destinations while introducing guests to new techniques and interpretations of familiar dining rituals.
For Maximilien Provis, Hotel Manager of Andaz Bali, the collaboration offers an opportunity to bring a different culinary perspective to the resort while retaining its distinctly local sense of place.
“We are very pleased to welcome Chef Julien Perrinet to Andaz Bali, by Hyatt. Bringing chefs from across the Hyatt family to Bali allows our guests to discover new ideas, techniques, and tastes in a setting that feels distinctly local,” said Provis. He added that the team looks forward to seeing how the chef translates his experience at Park Hyatt Tokyo into the special afternoon tea, alongside the quality of Les Vergers Boiron.
The experience will unfold at Village Square, a communal gathering space inspired by the traditional Balinese village. Reflecting Andaz Bali’s approach to hospitality, the setting brings together contemporary design and local influences, providing a relaxed backdrop for an afternoon dedicated to pastry and seasonal fruit flavours.
Available for two days only, the Afternoon Tea Experience by Chef Julien Perrinet is priced at IDR 295,000 net per person. For those seeking a distinctive culinary experience in Bali this October, the collaboration offers a limited opportunity to discover the artistry of Park Hyatt Tokyo’s pastry team without leaving the island.
Reservations can be made through andazbali.com or by contacting the resort’s dining team at DPSAZ-FB.Reservation@andaz.com.
