COMO Culinary Odyssey at COMO Uma Canggu Begins with the Bangli Edition

COMO Uma Canggu has launched a year-long culinary programme, the COMO Culinary Odyssey, to showcase Bali’s rich gastronomic traditions. Each edition will highlight the unique cuisine of a different region, offering a taste of local flavours through thoughtfully crafted menus. The programme aims to promote sustainability while supporting local farmers and preserving cultural practices.

The inaugural chapter, the Bangli Edition, will run from February to March 2025. The menu has been curated by executive chef Kadek Sugiantara, a Bangli native, whose deep connection to the region is reflected in the dishes. Signature offerings include Loloh Cemcem, a refreshing herbal beverage, and Mujair Nyat Nyat, a savoury fish dish infused with Balinese spices. Also featured is Betutu Keren khas Bangli, a slow-cooked chicken dish packed with bold flavours, along with traditional desserts like Jaje Abug, prepared with rice flour and palm sugar. Each dish is crafted using locally sourced ingredients and traditional cooking methods, evoking the authentic essence of Bangli.

The Bangli region is known for its stunning natural landscapes, including volcanic terrains, rice terraces, and the UNESCO-listed Mount and Lake Batur. Its cultural significance is further enriched by the Bali Aga community, whose ancient customs continue to influence the area’s culinary identity.

According to chef Kadek, the Bangli Edition offers a chance to share the flavours of his upbringing while celebrating the culinary legacy of his hometown. By showcasing regional ingredients and recipes, COMO Uma Canggu invites diners to explore an aspect of Balinese culture that is both rooted in tradition and evolving through modern interpretation.

COMO Culinary Odyssey will continue its exploration of Bali’s regional flavours, each edition spotlighting a unique area’s traditional cuisine. The Gianyar Edition will run from April to May, featuring the cultural heart of Bali known for its artistic heritage and vibrant markets. In June and July, the spotlight shifts to Buleleng, offering coastal-inspired dishes from the island’s northern shores. The Karangasem Edition, scheduled for August and September, highlights the eastern region’s distinctive culinary offerings, known for their blend of spices and fresh produce. October and November will feature the Jembrana Edition, showcasing West Bali’s rustic and earthy flavours. The journey concludes in December with the Klungkung Edition, which celebrates festive Balinese dishes to end the year on a traditional note.
