In a celebration of diverse flavours and culinary creativity, Park Hyatt Jakarta and Alila Seminyak are joining forces to present a series of unique dining experiences. These collaborations promise to highlight the talents of skilled masters, and also offering an opportunity for culinary enthusiasts to explore inventive creations. Here’s a detailed look at what to expect from these upcoming events.
Fire & Ice Bar Takeover on 30 November
For one evening only, the Beach Bar at Alila Seminyak will host Fire & Ice, a bar takeover that merges the distinct styles of two experts. Combining forces of Beach Bar’s resident mixologist, Wi Mustachio, with the inventive touch of Melvern Nathaniel from KITA Bar at Park Hyatt Jakarta. Guests can look forward to enjoying original cocktails at Rp150,000 each, with a blend of local and global inspirations.
Nathaniel’s menu will feature drinks such as La Familia, an intriguing combination of local coffee bean-infused Ketel One Vodka, elderflower, coconut, sea salt, and CO2. There’s also Resurgence, which incorporates curry leaf-infused Don Julio Blanco, calamansi lime, curcuma honey, pineapple, and grapefruit bitters.
On the other hand, Mustachio will present the Seminyak Sea Pearl, made with Johnny Walker Blonde Label, lemon, seaweed soda, and lemon caviar. His second creation will be Tropical Vibes, a tropical mix of Tanqueray Gin, coconut oil-washed pandan, nata de coco, and a touch of coconut spray.
Tale of Tastes: Volume II Dinner on 30 November
The bar takeover will be followed by Tale of Tastes Volume II at Seasalt. This dinner event, priced from Rp750,000 per person with an optional sake pairing for Rp500,000, promises an artful combination of Japanese and regional influences. KITA 喜多 Restaurant’s chef Yukio Takeda joins forces with chef Hazwan Hamdan of Seasalt to create a memorable menu.
The line-up begins with Katsuobushi Potato Waffles topped with organic greens, tobiko, and unagi glaze. The menu progresses to an Elder Flower Sorbet as a refreshing palate cleanser before moving on to the main courses. You can choose between Snow Fish enhanced with spicy ponzu and ginger oil soy sauce or Citrus Aged Duck with a wild honey and goat cheese croquette and Bedugul grape sauce. A Black Sesame Flan Tart with soya bean ice cream completes the meal. For those opting for the sake pairing, curated selections like Kurosawa Junmai Kimoto and Tokubetsu Hanjozo will be offered.
Brunch Volume II on 1 December
The second and final day, Seasalt will once again host a brunch titled Volume II, curated by chef Yukio Takeda and mixologist Melvern Nathaniel. Starting from Rp550,000 per person (food only), guests can opt for additional beverage packages: Rp450,000 for a standard selection or Rp750,000 for premium drinks.
Expectations are high for the live station featuring tuna prepared in various styles, such as Negitoro, maki, sashimi, and soft-shell crab hand rolls with anchovy teriyaki mayonnaise. Fresh Sumbawa oysters will highlight the cold station, paired with prawns, crab, and scallops. Other menu highlights include seafood shakshuka served with crispy bread and Asian skewers like chicken yakitori and lamb kofta.
