Born and raised in a humble fishing village in Hue, Central Vietnam, Peter’s journey into pastry began with an unlikely starting point: cooking for his younger brother. What began as a necessity quickly turned into a lifelong calling, sparking a curiosity for flavours, textures, and the artistry of food.

His professional career took shape at JW Marriott Hotel Hanoi, where he mastered the fundamentals of pastry and bakery within the fast-paced world of luxury hotels. Over the years, he refined his craft at some of Vietnam’s most prestigious resorts – including JW Marriott Phu Quoc, InterContinental Phu Quoc, and Sheraton Phu Quoc – where he became known for his artisanal bread, intricate chocolate work, and show-stopping desserts. His leadership in pre-opening projects and large-scale events honed his ability to balance creativity with precision, ensuring that every detail speaks of excellence.

Today, at New World Phu Quoc Resort, Chef Peter oversees the resort’s entire pastry and bakery operations, curating experiences that range from elegant afternoon teas to seasonal dessert menus across its restaurants, lounges, and event spaces.
