In Ubud, where dining experiences often draw inspiration from the island’s cultural heritage and natural surroundings, a new steakhouse is inviting guests to slow down and savour the art of a well-composed evening. Located within Equipoise Resort in Kenderan, RISERVA introduces An Evening in Seven Chapters, an intimate dining concept that brings together contemporary European grill cuisine, premium cuts of meat, an exceptional wine programme and a series of rituals inspired by Balinese philosophy.
The experience begins well before guests take their seats. Set against sweeping views of Ubud’s forest and rice fields, the evening opens with a sequence of ceremonial gestures designed to ease guests into the occasion. A Gong Ritual welcomes arrivals, followed by a Foot Wash Ritual, Seven Tirta and Final Purification. Guests then proceed to a personalised Wariga experience, before enjoying Welcome Canapés, or Lungsuran, accompanied by a welcome drink. A ceremonial Champagne Sabrage marks the transition into the dining experience.
Rather than following the conventional rhythm of a multi-course dinner, RISERVA encourages guests to embrace each moment at an unhurried pace. With a maximum of 16 guests welcomed each evening and only one seating available, the experience is deliberately intimate, allowing every chapter to unfold with a sense of occasion.
At the heart of the kitchen is Chef Putu Armen, whose culinary philosophy centres on premium ingredients, skilled preparation and allowing the natural character of each component to take the lead. This approach is particularly evident in the restaurant’s selection of premium beef cuts, which showcases a range of Wagyu from distinguished producers and regions.
The selection includes Sanchoku Wagyu Picanha MB 8/9, Stone Axe Wagyu Bavette MB 8/9, Phoenix Wagyu Grain Fed T Bone 6/7, Stone Axe Fullblood Wagyu Striploin MB 8/9, Sir Harry Citrus Fed Wagyu Ribeye MB 9+ and A5 Miyazaki Japanese Wagyu Striploin. Each cut brings its own expression of texture, richness and flavour, placing the quality of the meat firmly at the centre of the experience.
Beyond the kitchen, two distinctive rituals add another layer of craftsmanship to the steak course. Through Seven Knives, guests are invited to choose their preferred steak knife from a curated collection inspired by Bali’s Pande heritage, a tradition associated with the island’s master metal artisans. Seven Salts follows with an assortment of artisanal salts from Bali and international origins, including Tejakula Salt from North Bali. Together, these thoughtful details transform the familiar steakhouse ritual into something more personal and considered.
The wine programme is equally integral to the experience. Curated by Sommelier I Putu Erawan Ari Widhiantika, named Bali Best Sommelier 2025, the collection spans established wine regions across Europe, the Americas, Oceania and South Africa. Carefully selected bottles are chosen to complement the character of each course, while guests can also enjoy considered pairings guided by the sommelier. For those wishing to explore a wider selection, the Coravin wine programme offers additional options by the glass.
As the evening draws towards its final chapter, guests are invited to continue the conversation at Aura Lounge. Here, petit desserts and crafted cocktails provide a relaxed conclusion, with the surrounding valley offering a quiet backdrop to linger a little longer.
While RISERVA is housed within Equipoise Resort, it operates as an independent dining destination, welcoming both resort residents and guests from across Bali. Its reservation-only format, limited to 16 guests per evening, reinforces the restaurant’s focus on personalised hospitality and an experience that values time as much as the food itself.
For those seeking a fine dining experience in Ubud that extends beyond the plate, RISERVA presents a compelling proposition: a celebration of exceptional steak, thoughtful craftsmanship, wine and Balinese-inspired rituals, composed into seven chapters of an evening worth savouring.
