Drawing inspiration from the majestic Majapahit era, known as the golden age of Java, this elegant venue beckons guests to unwind on the terrace, whether savouring a sunset drink or indulging in the exquisite creations of chef Joan Achour.  A highly skilled French culinary artist, she brings with her a wealth of experience gained from renowned establishments such as Jumeirah Maldives and Jumeirah Mina A’Salam in Dubai, where she honed her craft in Europe’s finest dining establishments.

Stepping inside, patrons are enveloped by a refined atmosphere reminiscent of a regal banquet hall, unlike the bygone time when Javanese royal family hosted intimate gatherings amidst opulence and ceremonial grandeur.

The Asian Fusion Menu at AKASA

AKASA’s Asian fusion menu is a culinary adventure that blends the rich, smoky flavors of Bali with influences from Thai, Japanese, and Korean cuisines. Achour’s approach embraces the island’s tradition of communal dining, featuring dishes perfect for sharing.

Start with a crudo selection, including flame-grilled tuna tartare and Peruvian-style whitefish ceviche. The menu showcases Bali’s finest seafood ingredients, cooked over an aromatic wood-fired flame. Before the main course, diners can enjoy succulent grilled Jimbaran prawns, lemongrass-infused lobster, or fresh oysters. The robata selection offers delights like kimchi prawns and seared teriyaki lamb.

The mains feature standout dishes like tiger prawns with Thai-style sambal, scallops with red bean cream, and local sea bass in a banana leaf with coconut, turmeric, and lemongrass. Steak lovers can savour dry-aged beef, including premium tomahawk and wagyu cuts, aged for at least 25 days. Accompanying sauces and premium peppercorn varieties enhance the dining experience.

Desserts at AKASA are another highlight, with options like pandan crème brûlée and a chocolate sphere with raspberry compote. An extensive wine selection is stored in an underground cellar, accessible by a glass elevator, and live music performances add to the ambiance. AKASA’s cocktail menu takes you on a nostalgic journey through Balinese history, with drinks inspired by the Majapahit empire. Try ‘The First King,’ ‘Nusantara,’ or ‘Gajah Mada’ for a flavorful experience enriched by history and culture.
