Lady M introduces its first Champagne Bar in Singapore

New York staple Lady M expands its Singapore presence with yet another boutique. This time, it’s a global first – a Champagne Bar which aims to add sparkle to the luxurious cake experience.

Vijay Pillai, CEO of Singapore partner firm Caerus Holding says that they wanted to “refresh our dining experience by introducing a new yet perennial pairing of cakes and champagne that celebrates life.”

Located on the third floor in Ion Orchard, the bar is suitably placed amongst high-end boutiques. The svelte décor of rose gold columns and custom-designed hanging lights is elegant and inviting and sets the perfect scene for the cakes and bubbles on offer.

The signature weekend afternoon tea ($60 for two guests) is on offer from 17 July and presents Lady M’s iconic pastries and savouries on a two-tiered stand. Artisanal teas and two glasses of Bruno Paillard Champagne, Première Cuvée Extra Brut complete the indulgent experience.

From the selection of cakes, choosing a favourite was a difficult task. The Champagne Mille Crêpes, a signature cake of the month, steals the show with its layers of strawberry-laced pastry cream and champagne gelee topper. Of course, the champagne used is a Bruno Paillard Rosé cuvée lending its notes of berries to the cake. Alongside, you will find little Pink Petit Choux pastries enrobed in baby pink icing, and Petit Very Berry Tart dotted with a trio of berries which is a visual delight.

From the savoury offerings, the Open-faced Lobster Toast was our favourite, along with the Truffle Cream Crab Tartlet. The mini cucumber sandwiches – a must to an afternoon tea production – complimented the champagne as well as the tea offerings.

Artisanal teas from Art of Tea are available by the pot or cold-brewed and presented with care in a special trolley service. In addition, more champagne can be ordered by the glass or bottle should the occasion call for it.

In addition to small bites, the bar exclusively debuts Chilled Caviar Angel Hair ($40), umami twirls of pasta in house-made Shio Kombu dressing and finished with speckles of European caviar. The Creamy Lobster Fettucine ($32) was a little heavy on cream but salvaged by fresh sustainably-caught lobster chunks.

The boutique carries a full selection of cakes that are hand-made fresh daily, available in slices or whole, including the Signature Mille Crepes ($14) and its various iterations like Green Tea, Rose and Pistachio.
