Michelin-starred chef to cook at Yantra

The world’s first Indian chef to be awarded a Michelin star in 2001 and 2009 for his UK restaurants, Zaika and Rasoi, Vineet Bhatia is conducting a series of Champagne pairing dinners and a cooking demonstration at Yantra.

Credited for revolutionising Indian food in Britain with his bold modern approach to the complex cuisine, Bhatia sets new boundaries with inventive pairings like tandoori duck confit.

Together with Yantra’s host chef, Chintan Pandya, they will showcase the best of south Asian cuisine. A case in point: plain basmati rice layered with vegetables is transformed to an exotic ‘Parda Subz Biryani’ with the addition of dry fruits and fresh herbs. A spritz of rose water perfumes the dish which is then served with a yogurt dip adorned by scarlet pomegranate jewels.

Friday 27th August, 7.30pm
5-course Grand Champagne Dinner, $150 nett ($100 without Champagne).
Champagne Henriot Blanc de Blanc is paired with a herb-infused chicken tikka, slow cooked tomatoes and spiced balsamic dressing as an elegant prelude to a five-course dinner matched with other exceptional selections from the Champagne house.

Saturday 28th August, 12pm and 7.30pm
Cookery Demonstration with chef Bhatia followed by a buffet spread, $60.
Chef Vineet demonstrates how to cook the above-mentioned herb-infused chicken tikka dish, an oven-baked sea bass, and blueberry and black cardamom pannacotta.

5-Course Set dinner featuring the best of chef Bhatia, $88.
Chef Vineet shows what he does best—Taking a basic Indian recipe and spinning it into a gourmet creation with the use of decadent ingredients. The main course features a classic lamb shank, done Rogan Josh (aromatic curry in Kashmiri style) and cooked with North Indian spices, 24-carat gold leaf and roasted cashew nut khichdi (rice and lentils).

Sunday 29th August, 12pm
A la carte brunch, $88 ($125 with Champagne Henriot).
A buffet brunch spread of chef Vineet’s and Yantra’s signatures. Try crisp almond crusted peas, grilled ginger and chilli lobster, and cashew nut rice pudding with saffron.
