The Amaro Bar at Osteria Mozza brings back the popular tradition of aperitifs or aperitivi with a new cocktail menu conceptualised by bar manager, Lucas Swallows. The slightly sweet and dry Negroni ($22), made up of a heady mix of dry gin, Italian vermouth and Campari, is garnished with a deftly burnt silver of orange peel to open up your palate for the evening. The bitter notes in the burnt rosemary of the Burricotta were also well matched by Swallows’ interpretation of the iconic Singapore Sling ($22), which contains a splash of herb-flavoured Benedictine Dom.
