Caesar salad with prawns and bottarga

Serves 4
Prep time 15 minutes

300g fresh romaine lettuce  
10g garlic cloves, finely chopped
20g onions, finely chopped     
100g bread croutons
extra virgin olive oil, to taste
3 tbsp Caesar salad dressing
250g fresh prawns, boiled and shelled

garnish
1 tbsp grated bottarga
orange zest

  • Wash and slice the romaine lettuce.
  • Add the garlic, onions, croutons and olive oil. Drizzle with Caesar salad dressing, and top off with prawns.
  • Toss with the grated bottarga for 1 minute. Serve with orange zest.
