SKAI Bar & Grill in Legian continues its Mixology Takeover series with a one-night collaboration featuring Deva Diantara of SKOOL Kitchen, scheduled for Saturday, 23 May 2026, from 6pm to 10pm. The concept is kept casual and beach-facing: cocktails built for warm weather, a menu of familiar grill plates, and a setting that suits sunset rather than spectacle.
A key ingredient for the SKAI SKOOL mixology takeover is mengkudu (noni), a local fruit often passed over because of its bitter, astringent edge. Deva’s brief is to make it easier to enjoy, using shrubs to soften the profile while keeping its distinct character intact.
One of the headline serves is Tomat, described as a lighter, more playful take on a Bloody Mary. It keeps the tomato flavour while reducing much of the colour and weight, designed to feel fresher and more drinkable – especially at the start of the evening.
The cocktail list is built to sit comfortably alongside SKAI’s kitchen staples such as Smoked Beef Patty, Wood-Fired Chicken, and Grilled Halloumi, making the night as much about pairing as it is about the bar. For guests who like their drinks with a clear idea behind them – without overcomplicating the mood – this takeover offers a neat mid-May reason to head beachside.
