The eatery, which will open 16 September, will boast walls adorned with vintage maps and postcards, as well as decorative ornate leafing. The experience for diners extends beyond the food; the restaurant will showcase the sights, sounds, smells, tastes and touches of the colonial era. Its eight different open concept kitchens also look set to bring diners on a multi-sensory journey through Singapore’s heritage cuisines. Colony will offer breakfast, lunch, afternoon tea and dinner daily, and vintage Champagne brunch on Sundays.
