Jang Table by Chef Ray Debuts with an Exclusive Korean Kitchen Takeover at Tangelo Bali, Ubud

Before Jang Table officially opens its doors in Nusa Dua, diners are invited to experience an exclusive preview of the concept through a limited two-night kitchen takeover at Tangelo Bali, located within Cicada Resort Bali Ubud, Autograph Collection. Taking place on 20 and 21 August 2026, the intimate dinner introduces Chef Ray’s contemporary interpretation of Korean cuisine, where tradition meets modern technique in a thoughtfully curated tasting menu.

Set against the tranquil surroundings of Ubud, the experience is designed to be more than a dinner. Tangelo’s softly lit dining room and serene evening ambience provide the ideal backdrop for Chef Ray (Suhwa Ku) to unveil the philosophy behind Jang Table – a concept deeply rooted in Korean culinary heritage while embracing global influences gathered throughout his career.

Chef Ray’s culinary journey spans South Korea, Australia, and Hong Kong, including time spent in several acclaimed Australian restaurants renowned for their wood-fire cooking and a formative tenure at Seoul’s three-Michelin-starred Mingles. These experiences have shaped a cooking style that balances precision with creativity, placing equal emphasis on fermentation, fire, and refined hospitality.

At the heart of the concept is jang – the traditional Korean fermented sauces that have long served as the backbone of Korean cooking. Rather than simply recreating familiar dishes, Chef Ray explores how these time-honoured flavours can be expressed through contemporary techniques, elegant presentation, and an international culinary perspective. The result is a tasting experience that feels authentic yet unmistakably modern.

Guests can expect an intimate multi-course tasting menu that celebrates craftsmanship, heritage, and innovation. Each dish reflects Chef Ray’s respect for Korean traditions while showcasing his passion for fermentation and wood-fire cooking – elements that have become defining signatures of his cuisine.

Available for IDR 1,600,000++ per person, the experience is intentionally limited, with only a small number of seats available across both evenings. Early reservations are encouraged, with the first five bookings receiving a 15% privilege.

While the event serves as a preview ahead of Jang Table’s official debut at Avala Nusa Dua, A Tribute Portfolio, it also offers a rare opportunity to witness the evolution of contemporary Korean dining through the lens of a chef whose culinary philosophy is shaped by both heritage and international experience.
