Kitchen Chemistry: Four Hands Dinner at Sudamala Resort, Senggigi

This July, something special simmers on Lombok’s shores. Sudamala Resort, Senggigi welcomes an exclusive Four Hands Dinner that brings together the resort’s executive chef Juandi and chef Dorin Schuster, Sudamala Resorts’ corporate chef and group food & beverage director, for a one-night-only collaboration.

Set for 18 July 2025, the evening will see two distinct culinary voices harmonise across a six-course menu paired with fine wines. The two chefs will curate a six-course wine-paired menu that weaves Indonesian flavours with refined global technique.

Hosted at The Deck, the evening begins with a session of curated canapés and welcome drinks from 7pm to 7.45pm, serenaded by live saxophone music and the ocean breeze. At 8pm, the dinner unfolds with a line-up designed to charm connoisseurs and casual diners alike.

A Crab Salad with mango and cucumber salsa makes the first impression, paired with a refreshing Corte Giara Soave 2022. Next, Soto Pesmol, a Betawinese classic featuring baby squid and prawns in rich coconut broth, finds its match in Casa Silva Gran Terroir Chardonnay 2022. A highlight of local seafood, the Ikan Bakar Kemangi showcases grilled barramundi in a sweet basil chilli blend, paired with a Protos Verdejo 2023.

Flavours then deepen with Scallop & Lobster Ravioli, served with ginger, herbs, bisque, and shellfish oil, alongside Hunter’s Riesling 2023. For the fifth course, the bold Daging Lemak Pedas brings braised wagyu shank in coconut milk spice, yellow rice, and vegetables à la Olah-Olah, paired with Puma Salice Salentino 2021. A sweet finale comes in the form of Chocolate Crème Brûlée, crafted with Junglegold Bali 64% chocolate and topped with salted caramel ice cream, paired with a final sip of Hatten Pino de Bali.

The menu is a harmonious showcase of the chefs’ culinary fluency: chef Dorin Schuster brings over 30 years of expertise from Michelin-starred kitchens and five-star hotels across Europe and Asia, while chef Juandi grounds the evening in regional authenticity with his deep understanding of local produce and tradition.
