Spa Esprit Group’s new exciting F&B concept Lazy Susan sees international guest chefs stage for a month or two at the restaurant group’s various dining establishments, cooking up a storm of culinary mash-ups from around the world

First up in the series is chef Haan Palcu-Chang. The half-Chinese, half Romanian’s deft ability to harmoniously combine flavours of different cultures results in a tasty menu that takes cues from traditional Asian hawker and tzechar fare, as well as global food trends. Singaporeans may have just caught up with the fried chicken and waffle craze, but Palcu-Chang takes it a notch higher with Stinky Meets Crispy ($22), crisp har cheong gai atop sinfully good rice flour waffles and drenched in spicy-sweet sambal maple syrup. In the vegetarian BBQ Jackfruit Bum ($12), Palcu-Chang expertly braises young jackfruit until it tastes like pulled pork, before slathering it with gula melaka BBQ sauce and pistachio-studded guacamole. Other note-worthy dishes to try include a moreish Lotus Root Salad ($9), Cheese ‘Mantou’ in Chilli Crab sauce ($14), and Luncheon Meat Croquettes ($8).

Lazy Susan will pop-up at House at Dempsey from 3 to 27 December, every Thursday to Sunday; and Open Door Policy from 5 to 24 January 2016, Monday to Sunday. www.lazysusansg.com
