InterContinental Bali Resort Celebrates Indonesian Culinary Heritage with Local Legacy, Global Recognition

Indonesia’s culinary identity is shaped by the diversity of its islands, the richness of its ingredients and the generations who have preserved its food traditions. At InterContinental Bali Resort, these stories take centre stage with Local Legacy, Global Recognition, a three-day culinary and cultural programme running from 30 October to 1 November 2026.

Presented as part of Wonderful Indonesia Gastronomy 2026 in collaboration with the Indonesia Gastronomy Network (IGN), the programme brings together renowned Indonesian culinary expert Chef William Wongso, Balinese culinary heritage custodians Pekak and Odah Tekor, and the resort’s culinary team. Across three distinct experiences, the celebration explores how traditional knowledge, regional flavours and contemporary hospitality can work together to keep Indonesia’s gastronomic heritage alive.

Rather than approaching food solely as a dining experience, the programme places equal emphasis on the people and cultural practices behind each dish, offering guests a closer connection to the culinary traditions of the archipelago.

Rasa Nusa: a taste of the archipelago

The programme opens on 30 October with Rasa Nusa, an exclusive six-course dinner at Taman Gita. Bringing together five chefs, the evening celebrates the breadth of Indonesian cuisine through dishes that reflect the country’s distinctive regional flavours and traditional ingredients.

Among the highlights are Nasi Campur Tekor by Pekak and Odah Tekor, alongside Lamb Rendang by William Wongso. Together, the dishes offer a glimpse into the culinary knowledge and regional identities that have shaped Indonesia’s food culture.

Scheduled from 6.30pm to 9pm, the dinner is priced at IDR 799,000++ per person.

Ombak ke Bara: from the sea to the flame

On 31 October, the focus shifts to Jimbaran’s coastal heritage with Ombak ke Bara, an immersive, hands-on cooking class led by Chef William Wongso.

Inspired by the fishing traditions of Jimbaran, the experience follows the journey from the arrival of local fishermen with the day’s catch to the preparation of ingredients over an open flame. Through this connection between the sea, local produce and culinary craftsmanship, participants gain a closer appreciation of the coastal traditions that continue to influence the area’s food culture.

Taking place at Alun Alun Garden from 4pm to 6pm, the cooking class is priced at IDR 450,000++ per person.

Pasar Rasa: a celebration of food and community

The three-day programme concludes on 1 November with Pasar Rasa, an open-air culinary market set against the garden surroundings of Taman Gita Lawn.

Running from 6pm to 9pm, the gathering brings together live cooking stations, Indonesian flavours, cultural experiences and local crafts in a setting that celebrates the relationship between food and community. Beyond the dishes themselves, Pasar Rasa recognises the individuals and communities whose knowledge and traditions continue to shape Indonesia’s culinary landscape.

Priced at IDR 750,000++ per person, the experience offers a lively finale to the programme, bringing together gastronomy, cultural expression and the spirit of the archipelago.

Preserving the soul of Indonesian cuisine

At the heart of Local Legacy, Global Recognition is a shared commitment to preserving Indonesia’s culinary identity while introducing its traditions to new audiences. By bringing together established culinary experts, local food custodians and contemporary hospitality, InterContinental Bali Resort creates a platform for the exchange of knowledge across generations.

The programme also reflects a broader appreciation of gastronomy as a cultural expression, one that extends beyond ingredients and techniques to encompass heritage, community and a sense of place.

For travellers and food enthusiasts seeking a deeper understanding of Indonesian cuisine, the three-day celebration offers an opportunity to explore the archipelago’s culinary heritage through thoughtfully curated dining, hands-on learning and cultural encounters.
