Italian all stars

Who: One Michelin-starred chef Laurent Peugeot from Le Charlemagne in Burgundy.
When: 11 to 16 July
What:  Known for his distinctive blend of minimalist French-Japanese cuisine with Italian influences, Peugeot displays his culinary arsenal with signatures such as Creamy Lobster Panna Cotta with Tuscany Olive Oil Sorbet, Crystal Bay Prawns and Prosciutto Crudo with Tomato-scented Oil, and Guinea Fowl with Ligurian Olive Oil.  A wine dinner ($275) on 15 July will feature fine accompanying wines from Domaine Yves Cuilleron in Chavanay-Rhone Valley, France including St. Joseph Les Pierres Sèches 2009, Ripa Sinistra 2008, and Côte Rôtie Madinière 2009.

Who: One Michelin-starred chef Igor Macchia from La Credenza Restaurant in Piedmont.
When: 21 to 30 July
What: Piedmont-inspired cuisine: Grilled Squid and Fried Prawns with Ginger and Potato Sauce, and Chocolate Mousse with Orange Creme Brulee and Fried Spaghetti. Look out for the Homemade Agnolotti Pasta with Hazelnut Oil and Grana Padano Cheese, which is served the traditional way—on a folded napkin.

Who: Fabio Granata from L’Arsenale restaurant in Lodi, Milan. In 1999, he received a Michelin star for his first restaurant, Tre Gigli all’ Incoronata di Lodi, making him the youngest chef in Italy to receive a Michelin star at the age of 28.
When: 17 to 21 August
What: ‘Territoire cuisine’ with seasonal produce from Lombardy in dishes like Sturgeon Confit with Chick Pea ‘Panissa’ and Parsley Sauce, and Lightly Smoked Foie Gras with Cantaloupe Melon Jelly and Port Wine Reduction. A Chef’s Cooking Class ($110) on 18 August will see Granata unveiling secrets to his northern Italian specialities with three dishes: Pan Seared Seafood with Tuscany Bread and Tomato Panzanella Salad, Canelloni stuffed with Eggplant and Smoked Scamorza on Tomato and Basil Coulis, and Chilled Dark Cherry Soup in Pinot Noir with Black Pepper Gelato.
