The Mediterranean freshness of hamachi with clam and fennel gives way to the bold warmth of charcoal-grilled chicken with chili and honey, a dish that feels like young love: tender, crisp, and intense. Rich wagyu with herbaceous beans and aromatic perilla conjures the poetic atmosphere of a rainy evening in Tokyo, while a minimalist tamarind and salt palate cleanser offers a soft interlude, akin to drifting clouds.
