Bali’s culinary identity is often associated with the island’s coastal villages and southern destinations, yet some of its oldest food traditions come from the cooler highlands. At Sawah Terrace in Mandapa, a Ritz-Carlton Reserve, a new seasonal menu turns the spotlight towards Bangli, introducing guests to a collection of heritage dishes that have quietly endured through generations. Available from October to December 2026, the experience forms the latest chapter of the resort’s ongoing Untold Flavors of Bali series.

Unlike the rest of Bali, Bangli is the island’s only landlocked regency. Surrounded by volcanic landscapes, fertile farmland, and lakes such as Batur, its cuisine has developed around preservation techniques, mountain produce, and recipes shaped by generations of farming communities. Through this seasonal menu, Mandapa looks beyond Bali’s better-known dishes to celebrate a region that rarely appears on restaurant menus despite its rich culinary traditions.
One of the highlights is Urutan Babi, a traditional pork sausage seasoned with galangal, ginger, turmeric, and coriander before being encased in natural pork intestine and slowly smoked over the grill for around four hours. The lengthy smoking process, unique to Bangli, creates a deeply savoury flavour that reflects the region’s long-standing approach to preserving food while enhancing its character. Served with rice and sambal embe, it remains one of Bangli’s defining comfort dishes.
The menu also features Be Jair Menyatnyat, a freshwater fish stew originating from Kintamani. Fried fish is simmered with aromatic Balinese spices including ginger, galangal, and turmeric until the cooking liquid reduces into an intensely flavoured sauce – a technique known locally as nyat-nyat. The result is a dish that is both vibrant and deeply rooted in the lakeside communities of Bangli.
To conclude the meal, Jaje Abug offers a glimpse into Bali’s ceremonial traditions. Prepared from sticky rice, coconut, and palm sugar, the humble dessert has long been enjoyed during celebrations such as Galungan and Kuningan, demonstrating how simple ingredients can become enduring expressions of local culture.

The newly launched menu is about more than introducing new dishes; it continues the philosophy behind Untold Flavors of Bali, a series dedicated to uncovering the island’s lesser-known regional cuisines and presenting them with authenticity rather than reinterpretation. Instead of looking outward for inspiration, the resort turns inward, inviting diners to discover the remarkable diversity that already exists across Bali’s villages and mountain communities.
