Collaborations between restaurants often involve guest chefs stepping into another kitchen, but Red Hot China takes a different approach. To celebrate its first anniversary, Jade River Chinese Restaurant at Pullman Ciawi Vimala Hills Resort Spa & Convention is joining forces with Jakarta’s Apollo Wu Artisan for a six-day culinary exchange that sees both restaurants sharing signature dishes, philosophies, and culinary identities across two cities. Running from 30 October to 6 November 2026, the collaboration is built around the idea that meaningful dining experiences begin with conversation, curiosity, and the willingness to learn from one another.
Rather than presenting two separate menus under one roof, Red Hot China encourages the restaurants to exchange what makes each of them unique. During the collaboration, Jade River’s signature dishes travel to Apollo Wu in Jakarta, while Apollo Wu’s celebrated Cantonese-inspired barbecue makes its way to Ciawi. The result is less of a takeover and more of a culinary dialogue, allowing guests to experience familiar restaurants from an entirely new perspective.
The concept is inspired by the symbolism of water and fire. At Pullman Ciawi, Jade River has built its identity around premium seafood, with its river-inspired setting reflecting the element of water. Apollo Wu, meanwhile, is defined by fire, centred on its custom-built Apollo BBQ Oven, where high temperatures create the smoky character and tenderness of its Cantonese-style barbecue. Together, the two restaurants represent contrasting culinary approaches that meet through craftsmanship rather than competition.
That contrast is reflected throughout the family-style menu. Jade River contributes refined seafood creations including Pumpkin Fish Maw Soup with Dried Scallop, Steamed Soon Hock Fish Fillet topped with Minced Duck and Caviar, and Crabmeat Ball with Prawn Bubble Crumbs and Avocado Mayo Sauce, before concluding with an unconventional Coffee Pudding with Potato Sweet. Apollo Wu responds with dishes that showcase its mastery of Cantonese barbecue, including the restaurant’s signature Forbidden Black Duck, alongside Szechuan Spicy Chicken Stir Fry, Dragon X.O. Fried Rice, and Mango Cream with Pomelo.
Beyond the menu itself, the collaboration reflects a shared belief that Chinese cuisine continues to evolve through exchange. Jade River’s seafood-led approach and Apollo Wu’s contemporary Cantonese barbecue traditions may begin from different culinary philosophies, yet both are rooted in respect for technique, hospitality, and the communal spirit of sharing food around one table.
Red Hot China also marks an important milestone for the resort. Since opening, Jade River has established itself as a premium Chinese dining destination in the Bogor area, and its first anniversary becomes an opportunity not only to celebrate the past year but also to explore new creative possibilities through partnership.
Taking place from 30 October to 6 November, Red Hot China invites diners to discover what happens when two distinctive interpretations of Chinese cuisine meet halfway. Rather than asking guests to choose between water and fire, Jade River and Apollo Wu demonstrate that the most memorable dining experiences often emerge when contrasting ideas are brought together at the same table.
