Bali’s dining scene continues to thrive on creative collaborations, and this October, two distinctive culinary destinations are coming together for a special beachfront experience. On 25 October 2026, The Sayan House makes its way from the lush surroundings of Ubud to Starfish Bloo at W Bali – Seminyak, bringing its signature Japanese–Latin fusion cuisine to the resort’s celebrated Sunday Brunch. The one-day collaboration offers diners an opportunity to explore contrasting culinary traditions in a setting that captures the relaxed spirit of Bali’s coastline.

Known for its inventive approach to Japanese and South American cooking, The Sayan House has developed a culinary identity that brings together delicate Japanese techniques with the vibrant flavours of Latin America. The collaboration is led by Chef Dipa Mahayana, Kitchen Manager at The Sayan House, who will introduce a dedicated station within Starfish Bloo’s Sunday Brunch buffet, showcasing some of the restaurant’s signature creations.
Among the highlights is Ceviche del Mar, featuring fresh fish of the day paired with Salsa Veracruz, green Tabasco, ohba leaf, lime, and shiso oil. The dish captures the essence of the collaboration, combining the refreshing acidity associated with Latin American ceviche and the aromatic precision of Japanese ingredients.
Another standout is Tokyo Curry, a comforting combination of beef curry sauce, rice, egg, and butter, finished with chimichurri for a South American twist. Meanwhile, Los De Sashimi brings together citrus-marinated prawns, salmon, and tuna with fresh vegetables and wasabi dressing, offering a lighter expression of the restaurant’s cross-cultural philosophy.
The menu continues with Chicken Nanban, featuring fried chicken accompanied by nanban dashi, tartar sauce, and salsa Mexicana, while the Guacamole Roll combines avocado guacamole with corn tempura, barbecue sauce, sweet soy reduction, and chilli mayonnaise. A creamy Basque Cheesecake rounds out the selection, bringing a familiar European-inspired dessert into the Japanese–Latin dining experience.

Beyond the food, the collaboration offers an interesting contrast between two of Bali’s most recognisable dining environments. While The Sayan House draws much of its identity from Ubud’s tropical landscape, Starfish Bloo brings the experience to Seminyak’s beachfront, where ocean views and an easygoing atmosphere have long defined its Sunday Brunch.
Rather than reinventing either restaurant’s identity, the collaboration allows both to complement one another. The Sayan House introduces its distinctive fusion creations, while Starfish Bloo provides the familiar setting and generous brunch format that encourages guests to explore different flavours at their own pace.
Taking place from 12pm to 3.30pm, the special Sunday Brunch offers a culinary journey that moves effortlessly between Japanese precision, Latin American vibrancy, and Bali’s relaxed coastal lifestyle. For one afternoon, the journey from Ubud to Seminyak becomes less about distance and more about discovering how different culinary cultures can come together around one table.
